Corn fritters

Enjoy these simple corn fritters as a delightful breakfast or pair them with a fresh salad for a satisfying light meal.

Ingredients:

  • Corn = 4 Cobs
  • Onion= Chopped 4 Spring
  • Flour = 1 Cup
  • Eggs = 2
  • Coriander = 1 bunch fresh
  • Parsley = 1 bunch fresh
  • Olive Oil = 1 tablespoons

Method :

1. Begin by removing the green covering from the corn and trim around 3 cm off one end of the corn cob to create a flat surface

2. Carefully slice down the sides of the cob to remove the kernels by Holding the corn cob vertically with the cut end facing down.

3. Transfer the corn kernels to a bowl, make sure the bowl have enough space for mixing , and then finely chop the spring onion and herbs.

4. Add the chopped onion, other herbs, and flour to the bowl containing corn kernels, and then add egg in the center of the mixture by making a small hole spacing for it.

5. Mix all the ingredients together so that it will get combined thoroughly .

6. On a medium heat put a non-stick frying pan on the stove and then add 1 tablespoon of olive oil , after that pour the corn mixture from the bowl into the pan to form a small circle.

7. Cook the mixture for about 2-3 minutes or until it gets golden browned on the bottom and then carefully flip the fritter, cook for 2-3 minutes again from the other side to make this side golden brown as well , and then transfer it to a plate.

8. Repeat the frying steps for the remaining mixture, by adding more oil as needed.

Some Useful tips

  • Canned corn can be used as an alternative for saving your time.
  • You can use any herbs to enhance the flavor , if coriander or parsley isn’t available.
  • Corn fritters pair well with salad in meals or with eggs in the breakfast.
  • Don’t forget, corn cobs are compostable!
